We break down the basic styles of service below. These are the foundations of service for a catered meal, but offering variations or combinations of these service styles can ensure your event is like no other.
PLATED & SERVED
Guests are seated and served a pre-selected meal. Clients can opt to offer their guests a choice of entrée upon return of an RSVP or serve all guests the same dish, aside from dietary substitutions needed. A typical plated dinner includes a salad, bread and compound butters, and an entrée with a protein, a vegetable, and a starch. Coursed menus with multiple dishes can add to the guest experience.
STROLLING STATIONS
Strolling stations can be any mix of food stations spread throughout a space to encourage movement, networking, and a variety of cuisine options. These can be buffets where guests serve themselves, attended by a chef or station attendant, build-your-own options or composed small plates. Custom displays can add to the impact of a food station.
From build-your-own-hash-bowls for breakfast to a bisque bar for lunch and our classic Streets of Detroit inspired strolling dinner, stations offer the best variety for all dietary needs and get your guests talking about all of the fun options available.
THE BUFFET
The classic buffet doesn’t have to be boring. With high-quality ingredients and flavors done right, Skosh can take a buffet from simple to elevated. Take care of your guests' with multiple entrees and all of the accompaniments.
Our standard buffets consist of two salads, bread and compound butters, vegetable, potato, pasta, and 2-3 proteins, but options are truly endless.
PASSED HORS d’OEUVRES
Small bites are passed on platters by the servers throughout an event space. Passed options can include light hors d’oeuvres for a cocktail hour or heavier options to stand as dinner. They can be the only source of food service during an event or in combination with other services like a buffet or strolling stations. Passed appetizers pack a punch of flavor and creativity into 1-2 bites.
FAMILY STYLE
Similar to a plated dinner, family style service allows guests to dine while seated at their table. Food is served to each table in a dish meant to be passed around the table for guests to serve themselves.
A key note about family style service: Make sure the tables have enough room for the number of dishes you plan to serve. Busy tablescapes with floral garlands, tall open flame candles, etc. do not allow for proper family style service.
